Most of the reviews I write will be for shelf-stable snacks and stuff you can just grab and eat, just because I know a lot of us don’t have much time to cook or bake. But last week I baked these brownies for my husband’s birthday, and WOWZER, I have to share!!!!
Very quickly before I review the brownies, I wanted to say a quick word about actress Jennifer Esposito. You might know her from Blue Bloods or the movie Crash. Many people think going gluten-free is just a trend, but for Jennifer, it was a matter of survival. In a 2024 interview, she revealed that her doctor described her condition as the worst case of Celiac disease they had ever seen. Her story in Jennifer’s Way isn’t just a memoir; it’s a warning about what happens when the medical system fails to recognize autoimmune symptoms. Anyway, I just wanted to show solidarity with her and for her! I have been celiac for over 20 years, and my husband is gluten free by preference, mainly to support me and keep all gluten out of the house.
Now, on to the BROWNIES!!!!!!! Ok, so, these brownies are HANDS DOWN the best gluten free brownie I have ever had! Maybe the best brownies, gluten included! I am serious!
Ok, first thing to say: I made the brownies exactly as the box described, except I used whole milk instead of water, and I added in a little bit more than the 2 tablespoons the recipe calls for.
And I added in 1cup of Lily’s baking chips no sugar added. I use a lot of the Lily’s products just because I think they taste great. But you can use 1 cup of any chocolate chips you want.
I mixed all ingredients and then let it sit for 30 minutes. I then poured the batter in the pan and baked them for 5ish minutes longer than it called for. And they came out looking and smelling amazing and perfectly cooked.
These are fudgy, decadent, and super easy to make. It had the perfect crackly crust and then rich chocolate fudge brownie inside!!!!!!!!!!! This is now a pantry staple for me. They are also incredibly versatile—toss in some chopped walnuts or a swirl of peanut butter before baking. Quick, simple, and satisfying! I am going to make them with salted caramel chips next time!
Bottom line: MAKE THEM! You will not regret it!! These brownies are indistinguishable from regular gluten brownies. I saw many reviewers who said they took these to parties and no one knew they were gluten free!
